Overnight Farm Oats

INGREDIENTS

  • 1/2 cup rolled oats
  • 1/2 cup milk (or plant-based alternative)
  • 1/4 cup Greek yogurt
  • 1 tbsp chia seeds
  • 1 tsp maple syrup
  • 1/4 cup mixed berries (blueberries, raspberries)
  • 1 tbsp toasted nuts/seeds

INSTRUCTIONS

  1. Combine Ingredients: In a jar or bowl, combine oats, milk, yogurt, chia seeds, and maple syrup.
  2. Refrigerate Overnight: Stir well, seal, and refrigerate for at least 4 hours or overnight.
  3. Top & Serve: In the morning, top with fresh berries and toasted nuts. Enjoy cold.

Rustic Herb Roasted Chicken

A classic, comforting roast chicken infused with garlic, lemon, and fresh garden herbs. Perfect for a Sunday dinner.

Rustic Herb Roasted Chicken

INGREDIENTS

  • 1 whole chicken (approx 1.5kg)
  • 2 tbsp olive oil
  • 4 cloves garlic, crushed
  • 1 lemon, quartered
  • Fresh thyme, rosemary, and sage
  • Salt and pepper
  • 1 onion, roughly chopped

INSTRUCTIONS

  1. Preheat Oven: Preheat your oven to 200°C (400°F).
  2. Prepare Chicken: Pat the chicken dry with paper towels. Rub all over with olive oil, crushed garlic, salt, and pepper.
  3. Stuff and Roast: Stuff the cavity with lemon quarters, fresh herbs, and onion. Place in a roasting pan.
  4. Cook and Rest: Roast for 1 hour, or until the juices run clear when pierced. Rest for 10 minutes before carving.
